
Crepes are very
thin, cooked pancakes that originated in Brittany, France. You can
find variations in almost every country. Italy has the crespella,
a very similar version that is made with olive oil instead of
butter. The Dutch are known for "pannekoeken"... sounds like
pancake. The Spanish have the tortilla which is also a version of
a pancake.
No matter what
the name, almost all of these treats were created because of their
use of inexpensive, and readily available ingredients. Crepes are
versatile, there are sweet and savory uses and can be found at
take out stands "creperies", eateries or even formal dining
venues. They are usually stuffed and folded to hold in the chef's
choice of offerings.
